Creamy Mashed Potatoes Recipe (Step-by-Step for Dummies 101)

Have you ever felt like whipping up a fancy dinner, and rice just wouldn’t do? Well, I had bought these pre-prepared lamb shank and beef brisket bourgignon from a restaurant, but wanted to make it extra special so I decided to pair it with homemade creamy mashed potatoes – made just the way I like it <3
DELECTABLE FOOD FOR THE DAY: CREAMY MASHED POTATOES
DIFFICULTY: Very easy, an 8 year old could do it
SERVING SIZE: Good for 5 people (if used for sides, NOT as a main)
PREPARATION AND BAKING TIME: 1 hour
INGREDIENTS
- 5 medium-sized potatoes
- 5 cloves of garlic
Seasoning
- 1 cup milk
- 1 stick of butter
- 100g of Parmesan Cheese
- Salt and Pepper
PROCEDURE
STEP 1: Prepare the potatoes
- Wash the potatoes, peel them, then dice them into small pieces. There’s a common misconception that you boil the potatoes whole, but actually, large, whole potatoes cook unevenly. So instead, I recommend you cut your potatoes beforehand into evenly sized smaller pieces for quick and even boiling.
- In a large pot, cover potatoes with cold salted water (at least 1 inch above the potatoes), then add 5 cloves of garlic (no need to dice, just mash it beforehand), then bring to a boil. Note: You can add more garlic if you want a strong garlick-y aroma and flavor.
- Do NOT overboil. Around the ~10 minute mark, check in on your potatoes. As soon as your fork can be inserted into the potato easily with minimal resistance, turn off the stove, and drain the potatoes.
- After draining, gently shake the potatoes for ~1 minute to release the steam and moisture from the potatoes. Once done, transfer to mixing bowl.
STEP 2: Prepare your liquid seasoning
- Place the following into a microwavable bowl: 1 cup milk, 1 stick of butter, 100g of Parmesan Cheese, Salt and Pepper. Pop it all into the microwave for 2 minutes for the butter to melt. You also want it to be hot so that when you pour over the potatoes, it’ll heat up the potatoes again, allowing it to absorb the flavors better
STEP 3: Mash the potatoes and add seasoning
- I like my potatoes slightly chunky, so I mash mash mash until a certain point, but don’t really mind if there are still some potato bits in there
- After mashing, gently pour some liquid seasoning over the potatoes, then layer potatoes over it. Repeat the pouring of liquid of seasoning then re-layer. You don’t want to overmix as this could result in a gummy texture, which is disgusting
