Creamed Spinach and Mushroom Side Dish DIY Recipe (Step-by-Step with Photos)

I was serving smoked duck breast and was wondering what side dish I could pair with it. I was toying around with the idea of a salad, but decided at the last minute that I preferred to have something more substantial to go with it. How? I literally googled “What to pair with duck” and Creamed Spinach showed up! I then decided to add mushrooms as well, because I like mushrooms 😉

Tbh, I wasn’t a big fan. LOL. It literally tasted like spinach and mushroom! But the side dishes I’ve tried in restaurants makes this combo super delectable and it just blended so well, so I’m not sure what spices I missed out on when I made this. Oh well, it’s still a ridiculously easy dish to whip up, so can’t complain.

 

DELECTABLE SIDE DISH FOR THE DAY: CREAMED SPINACH AND MUSHROOM

DIFFICULTY: Super easy

SERVING SIZE: Good for 5 PEOPLE

PREPARATION TIME: 30 minutes

 

INGREDIENTS FOR THE CREAMED SPINACH AND MUSHROOM

  • Oil (but I used rendered duck fat, which is so unhealthy but also sooo good)
  • 1 cup sliced mushrooms
  • 500g spinach
  • 3/4 bar of cream cheese
  • Salt, pepper, sugar

 

STEP-BY-STEP PROCESS TO COOK THE CREAMED SPINACH AND MUSHROOM

Step 1: Prep the spinach and mushroom

  • Bring out your 3/4 bar of cream cheese to soften it up beforehand
  • This was arguably the most time consuming part of the entire process – washing the spinach. I had to wash these three times, to be 100% sure there were no dirt or icky stuff clinging to it. My process was essentially – place spinach in big bowl, fill with water use hands to clean the spinach, then strain out the dirty water -> repeat said process 3x.
  • Thankfully, the mushroom was a much faster process. I dumped them out, then sliced them up!

Step 2: Cooking time

  • In a small plan, place your oil/butter equivalent, then dump in the mushrooms. Cook until tender. Depending on the mushroom you’re using, this can take anywhere between 2-5minutes
Cooked mushroom for ~3+ minutes
  • Add the spinach and mix with the mushrooms. Cover the pan and cook for 1 minute, or until the spinach is wilted
Cover the pan to make the spinach cook faster. You know it’s cooked when it’s wilted
  • Stir in the cream cheese. Taste test, and add salt, pepper, sugar as needed
