Airfryer Tofu Satay with Delicious Peanut Sauce (DIY Recipe with Step-by-Step Instructions)

I was making Pad Thai for lunch, and I wanted an appetizer to go with. Well, upon careful rumination aka some 5 mins googling, I decided to make TOFU SATAY, primarily because I actually had all the ingredients readily available. Yay me! Even better, it’s incredibly easy to make which is always a plug in my book.
DELECTABLE DISH FOR THE DAY: AIR FRYER TOFU SATAY WITH PEANUT SAUCE
DIFFICULTY: Easy
SERVING SIZE: Good for 5 people (as an appetizer)
COOKING TIME: 30 minutes
INGREDIENTS FOR THE TOFU SATAY WITH PEANUT SAUCE
Tofu Satay
- 2 blocks extra firm tofu, around ~500g
- 1/2 cup coconut milk (can substitute with either almond milk or heavy cream)
- 1/2 tbsp curry powder
- 1 tbsp maple syrup
- 1 tbsp soy sauce
- 1/2 tsp garlic powder
- 1/3 tsp salt
Peanut Sauce
- 1/2 cup coconut milk (again, can substitute with either almond milk or heavy cream)
- 1/4 cup peanut butter (better to use natural peanut butter, but I just used Skippy)
- 1/4 tbsp curry powder
- 1/2 tbsp soy sauce
- 1 tbsp maple syrup
- 1/4 cup water
- 1/3 tsp salt
STEP-BY-STEP PROCESS TO COOK TOFU SATAY WITH PEANUT SAUCE
STEP 1: Prepare the tofu and marinade
- Make sure you’ve purchased extra firm tofu so that it’ll fry up perfectly crispy. If you don’t have extra firm tofu however (like me!), make sure you press out as much water as you can beforehand
- Slice up your tofu into the rectangle/square sizes that’s just the right bite-size
- Mix the 1/2 cup coconut milk, 1/2 tbsp curry powder, 1 tbsp maple syrup, 1 tbsp soy sauce, 1/2 tsp garlic powder, and 1/3 tsp salt together in a bowl. Drizzle this marinade over the tofu, make sure they’re all well-coated, and let it marinate for at least 30 minutes
STEP 2: Prepare the peanut sauce
- Place the following ingredients onto a sauce pan: 1/2 cup coconut milk, 1/4 cup peanut butter, 1/4 tbsp curry powder, 1/2 tbsp soy sauce, 1 tbsp maple syrup, 1/4 cup water, and 1/3 tsp salt
- Let the sauce simmer over medium-high heat until thickened. If you like it a bit thinner, you can add a splash of water
STEP 3: Airfry the tofu satay
- So normally, you’re supposed to fry or grill the tofu satay. But, I’m lazy so I decided to just air fry!
- Place the marinated tofu onto the air fryer. Place the tofu in a single layer, and make sure there’s enough space in between the tofu
- Set the air fryer to 180 degrees C, and air fry for ~10-12 minutes until it’s nice and crispy
STEP 4: Serve with the peanut sauce
