Pad Thai DIY Recipe (Step by Step with Instructions)

What’s the most famous dish? Pad Thai, of course! No trip to Thailand or to a Thai restaurant is complete, unless you’ve tasted this dish. In fact, one of my fondest memories of Thailand was in tasting the different food dishes available – chief of which was Pad Thai.

So it’s no surprise that I wanted to try this dish for myself. After all, how hard could it be right?

 

DELECTABLE DISH FOR THE DAY: PAD THAI

DIFFICULTY: Easy, but super hassle to prep

SERVING SIZE: Good for 5 people

PREP TIME: 60 minutes (This already takes into account the fact that I cheated! I bought ready made Pad Thai sauce)

COOKING TIME: 30 minutes

 

INGREDIENTS FOR PAD THAI

I cheated on the sauce – but my friends say this is a good Pad Thai sauce recipe to follow: Pad Thai | RecipeTin Eats

I used this ready made Pad Thai sauce I purchased from Landers. Anyway, it wasn’t amazing, so I won’t bother posting it here.

 

Toppings I used

  • 200g Dried Rice Noodles (I used the Mama brand)
  • 1 onion, diced
  • 5 garlic cloves, finely chopped
  • 300g chicken breast, thinly sliced
  • 300g shrimp
  • 4 eggs, lightly whisked
  • 1/2 block firm tofu, cut into small blocks (around 1 cup worth)
  • 1/2 cup garlic chives (equivalent to ~4 cloves garlic, 1/2 cup scallions)
  • 1/2 cup finely chopped peanuts ( I used Barrio Fiesta Roasted Peanuts )

 

STEP-BY-STEP PROCESS TO COOK PAD THAI

STEP 1: Prep the noodles and all the toppings

This seriously took me SO MUCH time. I don’t know if I’m just inefficient, but ugh.

  • Let a pot of water boil, then place the noodles inside for ~5 minutes. Afterwards, drain the water and quickly rinse the noodles under cold water

  • Slice the chicken breast into thin strips. Marinate with salt, pepper, and Five Spice. Place into the refrigerator and let it rest for ~30 mins

  • Peel the shrimp, then lightly slice the side of the shrimp so you can take out the black strip of poop (ok, this took up most of my time)

  • Chop up the 1/2 block of firm tofu into smaller blocks

  • Place your roasted peanuts into a food processor, and let it crush!

  • Lightly whisk four eggs

STEP 2: Cook the Pad Thai

  • In a skillet over high heat, place some oil and add the diced onion and garlic. Cook for 30 seconds or until fragrant

  • Add the marinated chicken and cook for ~2 minutes or until the chicken is mostly cooked through (almost all white)

  • Add the shrimp and cook for ~1 minute or until the shrimp is pink

  • Push the toppings to one side of the pan and pour in the lightly whisked eggs. Scramble using a wooden spoon. Make sure the eggs are fully formed. Once formed, mix with the toppings

  • Add the tofu, the noodles, and the Pad Thai sauce

  • Toss gently until the sauce has been fully absorbed by the noodles

  • Add the garlic, chives, and the peanuts. Toss quickly then turn off the heat

STEP 3: Bon Appetit!
