Steamed Soy Garlic Scallops DIY Recipe (w/ Step by Step Instructions)

Guys – seafood dishes are my new fave! They are ridiculously easy to cook and oh-so-yummy, especially if your seafood is fresh. Having said that, the prep time takes so long! I wonder if I can just buy ready-made garlic oil somewhere, because the sheer process of peeling and dicing these garlic took 40 minutes!!! Besh, no one’s got time for that. Having said that, this is my favorite scallops recipe – compared to the cheesy version I made – just because you can really savor the succulent flavor of the scallop with this cooking methos.
Anyway, this dish is grandparents approved and very healthy. So come and see what it’s all about!
DELECTABLE DISH FOR THE DAY: Steamed Soy Garlic Scallops
DIFFICULTY: Easy
SERVING SIZE: Good for 5 people
COOK TIME: 1 hour
INGREDIENTS FOR STEAMED SOY GARLIC SCALLOPS
- 1 kg half shell scallops (around ~50-60 pcs)
- 3 stalk scallion, cut diagonally
- 6 tsp Lee Kum Kee light soy sauce
- 2 tsp sugar
- 2 tsp water
- 30 cloves garlic, chopped finely (this takes SO MUCH TIME)
- 4 tbsp oil
STEP-BY-STEP PROCESS TO MAKE STEAMED SOY GARLIC SCALLOPS
- Peel 30 cloves of garlic. I learned a new trick here! Cut off the tips (which holds together the skin), then use a mortar and pestle to pound the garlic cloves so the skin will peel off on its own.
- Chop the garlic finely into small bits. Quite frankly, I was a bit lazy by this point so my chopping was rather haphazard. Ohwell, it’s all the same once it enters your tummy anyway
- In a wok, heat it up, add 4 tbsp oil and stir fry the chopped garlic until light brown. Turn off the heat and set aside. Tip: Dish out as soon as the garlic starts turning light brown. It’ll continue to cook and turn golden brown even after you’ve turned off the heat
- Mix well the following: 6 tsp Lee Kum Kee soy sauce, 2 tsp sugar, 2 tsp water. If you find it too salty, you can add a bit more sugar or water.
- Wash your scallops (even if the seller told you they already washed it, wash it again!). You’ll find that there are black bits and pieces hiding beneath the meat and on the shell. Just gently rub them away
- Finally, place your scallops onto a plate, drizzle the sauce you made over the scallops, then transfer the plate into your steamer. Steam for 5 minutes or until the scallops turn opaque
- Once cooked, add the garlic oil and scallions on each scallop
