Tender Beef Stir Fry DIY Recipe (w/ step-by-step instructions)

OMG!! This recipe was a hit with my family. I am SO pleased. There were minimal complaints, the dish was licked clean… Ahhh this is what it feels like to cook a good dish LOL (okay tbf, this isn’t my FIRST good dish, but it feels like the first after a long time. Hmmm, or at least the first that wasn’t deemed unhealthy by my parents).

Anyway! What I like about this in particular is how it’s very tender. I was a bit worried because the recipe called for sirloin beef, and I don’t always good results from it…. But this was surprisingly good! (Also surprising because I made a mistake when making the black pepper sauce hehehe)

Ok, without further ado!!! My recipeeeeee!

 

DELECTABLE DISH FOR THE DAY: TENDER BEEF STIR-FRY

DIFFICULTY: Easy

SERVING SIZE: Good for 5 people

COOK TIME: 40 minutes

 

INGREDIENTS FOR TENDER BEEF STIR-FRY

  • 750g sirloin beef, sliced thinly (I had this done by the meat stop. The key here is to slice against the grain and have roughly 1/2 cm thickness?)
  • 6 garlic cloves, chopped roughly
  • 2 onion, sliced
  • 2 bell peppers, deseeded and sliced into strips

Beef Marinade: 

  • 1 1/2 tbsp soy sauce
  • 1 1/2 tbsp rice wine
  • 3/4 tsp baking soda
  • 4 tsp cornstarch 

Black Pepper Sauce: 

  • 3 tbsp oyster sauce
  • 3 tbsp rice wine
  • 2 tbsp soy sauce
  • 1/2 tsp dark soy sauce
  • 2 tsp sugar
  • 1 1/2 tsp ground black pepper
  • 2 tsp white vinegar

 

STEP-BY-STEP PROCESS TO MAKE TENDER BEEF STIR-FRY

  • Whisk together the marinade ingredients in a large bowl: 1 1/2 tbsp soy sauce, 1 1/2 tbsp rice wine, 3/4 tsp baking soda (this is the key to tenderizing the beef!), 4 tsp cornstarch (serves as a protective layer – essentially creates that velvety texture on the beef). Add the beef and make sure each beef strip is coated. Set aside to marinade for 20 minutes (can be longer!) – essentially make use of the chopping time

  • Chop up the garlic, slice up the onion and the bell peppers

  • Make the black pepper sauce by combining the following into a bowl: 3 tbsp oyster sauce, 3 tbsp rice wine, 2 tbsp soy sauce, 1/2 tsp dark soy sauce, 2 tsp sugar, 1 1/2 tsp ground black pepper, 2 tsp white vinegar
  • Time to stir fry! Add a dollop of oil, then the chopped garlic and sliced onion. Stir fry for ~30 seconds.

  • Push the onion and garlic to the sides of the pan. Add the beef strips in the center. Lay it out flat so it gets a nice sear. Don’t move it around. Just keep it there for ~2-3 minutes. Afterwards, mix it up with the vegetables

  • Before the beef is completely cooked through, add your sliced bell peppers.

  • Then add the black pepper sauce and mix to make sure everything is well-coated
