Crispy Roasted Potatoes DIY Recipe (with step-by-step instructions)

This dish is very similar to Ratatouille in style, and the way it’s cooked, except it’s only using potatoes – without the tomatoes and other vegetable base.
Overall, I thought it turned out pretty well. It’ takes a bit more work compared to my favorite potato wedges and baked potatoes. Still, there’s a different flavor and texture to this since the potato slices are a lot thinner (I’m super happy with my mandolin!)

INGREDIENTS FOR THE CRISPY ROASTED POTATOES
- 8 tbsp unsalted butter
- 3 cloves garlic, mashed
- 8 medium sized potatoes
- Pinch of salt
STEP-BY-STEP PROCESS TO MAKE CRISPY ROASTED POTATOES
- Preheat oven to 190 deg C
- In a small pan, melt the butter along with the mashed garlic
- Brush a little of the butter on the bottom of your baking pan. Set the remaining butter aside
- Using a mandolin (my fave investment!!), thinly slice the potatoes
- Fan out the potato slices into the baking pan. Drizzle the potatoes with the remaining butter and a pinch of salt
- Roast the potatoes for ~1 hour until it becomes crispy and golden brown
- Bon Appetit! I served it with roasted rack of lamb. Super yummy <3
