Crispy Roasted Potatoes DIY Recipe (with step-by-step instructions)

This dish is very similar to Ratatouille in style, and the way it’s cooked, except it’s only using potatoes – without the tomatoes and other vegetable base.

Overall, I thought it turned out pretty well. It’ takes a bit more work compared to my favorite potato wedges and baked potatoes. Still, there’s a different flavor and texture to this since the potato slices are a lot thinner (I’m super happy with my mandolin!)

  • 8 tbsp unsalted butter
  • 3 cloves garlic, mashed
  • 8 medium sized potatoes
  • Pinch of salt

STEP-BY-STEP PROCESS TO MAKE CRISPY ROASTED POTATOES

  • Preheat oven to 190 deg C
  • In a small pan, melt the butter along with the mashed garlic

  • Brush a little of the butter on the bottom of your baking pan. Set the remaining butter aside
  • Using a mandolin (my fave investment!!), thinly slice the potatoes

  • Fan out the potato slices into the baking pan. Drizzle the potatoes with the remaining butter and a pinch of salt

  • Roast the potatoes for ~1 hour until it becomes crispy and golden brown
