Baked Pork Tenderloin DIY Recipe (w/ Step by Step instruction)

I cooked lamb last year and bought Master Foods Mint Jelly, but we didn’t actually use up all the mint jelly. Fast forward a year later, it’s about to expire and so I’ve been looking for dishes I can cook to pair with it. Enter…. Baked Pork Tenderloin! Easy to make, minimal ingredients needed, I quite like it! (My mom says it isn’t tender enough, but all other family members disagreed with her so I shall proceed to ignore said comment sniff)

COOK TIME: 45 minutes
INGREDIENTS FOR BAKED PORK TENDERLOIN
- 2 pork tenderloins, around 700g in total
- 1 tbsp paprika
- 2 tbsp onion power
- 2 tbsp garlic powder
- 1 tsp oregano
- 1 tsp salt
- 1 tsp pepper
- ½ cup beef broth (I used pork though as I had extra pork broth lying around)
- 1 tbsp apple cider vinegar
- 1 tbsp butter
STEP-BY-STEP PROCESS TO MAKE BAKED PORK TENDERLOIN
- The night before, dry the pork tenderloins well with paper towels.
- Mix the 1 tbsp paprika, 2 tbsp onion powder, 2 tbsp garlic powder, 1 tsp oregano, 1 tsp salt, and 1 tsp pepper together in a small bowl.
- Rub this spice mix over all sides of the pork.
- Place into the refrigerator overnight. This allows the flavor to develop further and (hopefully) tenderize the meat
- Afterwards, heat the oil in a non-stick frying pan over medium-high heat. Add the pork, and sear the pork on all sides until it’s brown. I essentially tried to do 10 seconds per side. Searing before baking adds flavor and seals in the juices, so the pork stays more tender (super important!). Move the pork to a baking dish afterwards.
- Then, using the same pan, add the beef or pork broth to deglaze the pan. Scrape the bottom of the pan to remove the stuck bits, let it boil for 1 minute until it reduces to ~1/4 cup, then pour the sauce over the pork. This sauce adds flavor and helps ensure the pork remains juicy while baking
- Pour 1 tbsp apple cider vinegar over the pork, which will help tenderize the meat. Afterwards, dot the pork with butter bits for additional flavor
- Cover the baking dish with foil and pop into the oven set at 190 deg C for 20 minutes
- Let the pork rest at least 5 minutes before slicing them up. You should see this beautiful sear on the outside, and a nice pinkish center.
