Roasted Rack of Lamb DIY Recipe (with step-by-step instructions)

Ever since I discovered how to cook steak, with my trusty cast iron pan , I’ve pretty much been stuck cooking that for ALL special occasions. Birthdays? Check. Anniversaries? Check. Christmas? Check.
Well, my family put their foot down and said enough is enough! So I had a think and decided to upgrade to…. Roasted Rack of Lamb! Just thinking about it makes me drool. This is also pretty easy to cook and almost fool-proof. Read on to find out more 😉
DELECTABLE DISH FOR THE DAY: ROASTED RACK OF LAMB

COOKING TIME: 45 minutes
INGREDIENTS FOR THE ROASTED RACK OF LAMB
Bread crumb mixture
Honestly, I’m not super sold with this mixture. I feel like plain salt and pepper would’ve also done the job
- 1/2 cup fresh bread crumbs
- 2 tbsp minced garlic
- 2 tbsp chopped rosemary
- 1 tsp salt
- 1/4 tsp pepper
- 2 tbsp olive oil
Lamb
- 1 kg rack of lamb, trimmed and frenched (around 8 bones)
- 1 tbsp Dijon mustard
- Master Foods Mint Jelly
STEP-BY-STEP PROCESS TO MAKE ROASTED RACK OF LAMB
- Pre-heat oven to 230 deg C
- In a large pan, combine the bread crumbs, garlic, 1 tsp salt, 1/4 tsp pepper, 2 tbsp olive oil (to allow the mixture to mix better)
- Place your pan in high heat. Sear the lamb rack for ~2 minutes on all sides. Set aside for a few minutes to rest
- Brush the rack of lamb with the mustard, then roll in the bread crumb mixture until it’s evenly coated
- Arrange the rack bone side down in the skillet. Roast the lamb for ~15 minutes, to get a medium rare doneness for your meat.
- Let it rest for ~10 minutes before slicing into it. To pair, I also cooked roasted crispy potatoes which are just delicious, and Mint Jelly sauce (my preferred brand is Master Foods)
