Merly’s Special Bibingka Bataan Honest Review

I’m not a huge kakanin fan honestly, but I don’t know why, I felt so lured in when someone posted about this Merly’s Special Bibingka. Tbf, my friend’s mom really likes kakanin, so I always keep an eye out for good ones. So ok, let’s use that as an excuse haha!

Fun fact: so they call this a Special Bibingka, but I think it’s actually a Biko. I’m not sure why it’s called Bibingka tbh, because I associate bibingka as this round rice cake, topped with salted egg, sugar, and butter.

Whereas, biko for me is glutinous rice cake boiled in coconut milk and sugar until dry, then topped with latik (ugh so good, essentially the curdles that form after rendering oil from coconut cream!!!)

Anyway! Terminologies aside, this bibingka was very good. You can choose from two fillings (biko – ?? I guess this is their original, and monggo – also very good!).

Honestly, I especially liked Merly’s Bibingka because it was very generous with the latik. That’s it. That’s the big difference. Of course, the fact that it had filling also made it interesting (I recommend monggo para maiba) – but really, it’s the latik!!!!

Another bonus? You can keep it in the refrigerator, because it’ll remain good to eat for 5 days as long as it’s chilled
